This month we got Chef Chan of Holiday Inn’s Xin Cuisine Chinese Restaurant to take us behind the scenes of their vibrant team and mouth-watering modern interpretations of classic Cantonese dishes.

Chef Chan started out as a Fry Wok Cook in Hong Kong in 2002, before relocating to Singapore in 2011 and now sees himself helming the kitchen at Xin Cuisine Chinese Restaurant. His signature creations like Stir-fried Wagyu Beef Cubes with Black Pepper and Longan, Deep-fried Prawns coated with Yuzu Mayonnaise, and Poached Clams Xin Cuisine Style, speak for themselves and are a true reflection of how far he has come.
