LOW HOE KIAT of Spice Brasserie

Executive Chef Low Hoe Kiat has over 30 years of experience in the culinary sphere and he is adept at both international and fusion cuisine, having worked for multiple restaurants, catering companies, business hotels and international cruiser liners prior. A man of few words, Chef Low’s reserved demeanour contrasts his dexterity and control in the kitchen, creating unique and extraordinary meals with the ability to elevate the dining experience for all. Instead of trying to create foreign dishes for esoteric palates, Chef Low prefers to leverage upon established and familiar flavour profiles, while injecting hints of creativity into his innovations. This has proven to work as Spice Brasserie continues to lure people from all walks of life, looking to satiate their appetites for something hearty and wholesome.

The Wok-fried Crab in Wu Jia Pi Wine is part of Spice Brasserie’s crab party buffet dinner and is actually a family recipe. Other highlights of the restaurant’s endless crab party buffet, which brings eight brand new crab flavours, include the Salted Egg Crab with Curry Leaves, the Stir Fried Crab with Jalapeño and the Rock Salt Baked Crab.

Crab is sourced from Indonesia.

First, it is coated with corn starch and deep-fried, then sautéed with finely chopped Chinese herbs, ginger, garlic, red onion and red chilli.

The Chinese herbs include Dang Gui (or Angelica sinensis, also commonly known as dong quai or “female ginseng”), Yu Zhu (or Fragrant Solomonseal Rhizome) and Dang Shen (or Codonopsis).

Thereafter, it is flambéed with Wu Jia Pi wine and wolfberry, which gives it a very distinct overall fragrance.

Finally, it is sprinkled with the Five Spices Fragrance Salt to coat its outer layer.
